Head Chef/Proprietor - Peter Knibb
Born and brought up locally, Peter studied at The Trinity School and trained at Stratford College before completing a work placement at Claridge’s Hotel in London.
Following his placement, he was invited to join the team, working under Head Chef John Williams. Here, Peter discovered his cooking direction and set off to gain further knowledge and experience of modern European cuisine.
This led him to work under Paul Rhodes in the 3 Michelin starred Chez Nico, as well as stints as chef on board the luxury yacht "Seaborne Goddess" (catering for Cliff Richard’s 60th birthday party among others) and the Gucci family’s private yacht as it cruised the Mediterranean and the Caribbean.
Peter's travels then took him to the Michelin starred Mallory Court Hotel and also to work as a sous chef under Jun Tanaka in the Pearl Restaurant in London, before opening the doors to his own restaurant in May 2006.
